Dos Niñas Vineyard was planted in 1999 with a total of 7.5 acres planed. Vertical Shoot Position (VSP) Trellis system. Drip Irrigated. Works exclusively with Martin Ranch Winery. Harvested at 4.7 tons per acre.
Grapes are hand harvested. 80% whole berry, 20% crushed. Fermented in 1.5 ton bins. Punched down three times a day. One day cold soak six day fermentation, seven day total maceration. Highest fermentation temp @ 84.5 degrees Fahrenheit. Pressed at negative 1.0 brix.
Cooperage: 50% French Oak, 50% Neutral French Oak
