This Sangiovese has been crafted with traditional methods used in old world Italy. Aged in 500 liter casks, it delivers glimpses of cinnamon and clove, with red fruit undertones. Oak tannins complement the finish. It pairs perfectly with osso bucco, and will age gracefully in the years ahead.

Dos Niñas Vineyard was planted in 1999 with a total of 7.5 acres planed. Vertical Shoot Position (VSP) Trellis system. Drip Irrigated. Works exclusively with Martin Ranch Winery. Harvested at 4.2 tons per acre.
Grapes are hand harvested. 70% whole berry, 30% crushed. Fermented in stainless steel tank. Seven day fermentation, seven days total maceration. Highest fermentation temp @ 85 degrees Fahrenheit. Pumped over three times per day. Pressed at 0 brix.
Cooperage: 60% French Oak, 40% Neutral French Oak
