Established in 1983, the Arroyo Seco AVA has become a premier growing region for Pinot Noir and aromatic whites like Viognier. The rockiness of the soil increases the minerality in the wines profile and the strong afternoon winds helps the grapes develop thicker skins which also increases aromatics.
Grapes are hand harvested. Whole cluster cold pressed, settled for one day. Juice is fermented in stainless steel tank. 16 day fermentation @ 62 degrees Fahrenheit.
